Earth Day

Very quick and easy lunch to celebrate Earth Day!

  • Peanut butter/wheat Ritz crackers decorated to look like the Earth using food safe markers
  • Broccoli with ranch decorated with daisy picks
  • Strawberry slices and blueberries, decorated with letter picks
  • Girl Scout cookie (Girl Scouts love the Earth!)

I can't see a dragonfly without thinking of the adorable dragonfly named Evinrude in Disney's The Rescuers.

Simple Spring Lunch

As you may have guessed by my lack of posts, life as been busy (but fun!) the last few weeks.  I have been trying to knock out lots of projects at home during my slow time at work and before my kids are out of school for the summer.  Anyway, I've been going the "quick and easy" route when it comes to lunches.

  • Peanut butter cracker sandwiches made with Ritz "Spring" crackers

  • Vanilla yogurt with a strawberry heart

Spring Time Salad

We're still feeling the sandwich rut so the girls had a salad as an alternative:

 
  • Salad made with romaine lettuce, spinach, broccoli, carrots, celery, cucumber and cherry tomatoes and Italian dressing
  • Hard boiled egg, shaped like a flower with bug picks
  • Peanut butter on "spring" Ritz crackers

It's a Birthday kind of lunch!

As I mentioned before, my "baby" turned 8 this weekend.  Here is her lunch to celebrate her special day.

 
  • Birthday cake shaped sandwich decorated with birthday candles and a provolone "8", decorated with food markers
  • Carrots with a cupcake ring and ranch
  • Red grapes with a "happy birthday" cupcake pick
  • Hershey's miniature candy bar
 
I generally don't "reinvent the wheel" and make my children different lunches.  So, the non-birthday girl got a similar sweet lunch:

  • Cupcake-shaped sandwich decorated with cheddar and provolone cheeses and a cherry tomato
  • Carrots with cupcake ring and ranch
  • Red grapes with "Sweet" spelled out in letter picks
  • Hershey's miniature candy bar

Happy 8th Birthday Baby!

My "baby" turns 8 tomorrow and we are celebrating with an indoor pool party!  She saw this cake on Pinterest one day and begged me to make it for her.  GULP!  I am FAR from a professional cake decorator and I was afraid I wouldn't be able to make something comparable.   But, I'm pretty happy with how it turned out.




I used the FunBites "Cube It" cutter to cut out the fondant squares to go around the pool.  It worked PERFECTLY!  Thanks FunBites...you're not just for sandwiches!!
